About Umeko
Umeko is a seasonal fish don concept. Each season highlights one featured fish (at the moment, tuna), showcased as the primary element of the don, while complementary seasonal fish are thoughtfully incorporated to support and enhance the experience.
Our menu evolves continuously based on seasonality and availability. By spotlighting one main fish at a time, we are able to explore its character through cut, texture, preparation, and balance- while allowing supporting fish to add depth and contrast.
Umeko is not a traditional restaurant, nor does it strives to be authentically anything. It is a quiet, intentional interpretation of don- ever-changing, restrained, and designed to let the ingredients speak for themselves.
