Since opening in NoHo in 2016, Fish Cheeks has become a New York City institution, celebrated for its vibrant coastal Thai flavors and warm hospitality. From the start, it challenged expectations of Thai cuisine in the U.S., moving beyond familiar dishes to highlight the bold, seafood-driven flavors co-founders Jenn Saesue and Chat Suansilphong grew up with.
After nearly a decade of loyal followings, constant diner requests, and a Thai Select designation recognizing its authenticity and excellence, the brand expanded to Williamsburg in Spring 2025, a defining moment that underscored its impact on shaping New York’s understanding of Thai cuisine.
Executive Chef Dustin Everett, also co-owner of the Williamsburg location, supports this growth. After a decade in acclaimed American and Southeast Asian kitchens, including Momofuku Ssam Bar and Pig & Khao, he joined Fish Cheeks to reinvent his craft through Thai cooking.
To ensure authenticity, Dustin and the team have completed culinary immersions in Thailand, studying regional ingredients, techniques, and philosophies. In 2025, 55 Hospitality also hosted a workshop with celebrated Thai chef P’Ying on Southern Thai flavors and history, giving the full team a deeper understanding of the restaurant’s standards and approach.
Through collaborations with Kisa and Kalaya, the team introduced guests to new perspectives on Thai cuisine and, in February 2025, debuted a Chef’s Tasting Menu showcasing handpicked dishes.
Fish Cheeks’ flavor-forward cuisine, genuine hospitality, and dedication to thoughtful team development have made it a beloved destination for New Yorkers for nearly a decade. The Williamsburg opening extends this spirit to a new neighborhood while preserving everything that defines the flagship. Fish Cheeks continues to evolve while remaining a benchmark for excellence in New York’s dining landscape.
